Instructions

  1. Preheat oven to 400°F (200°C). In a saucepan, combine water and butter over medium heat until melted. Stir in flour until it forms a ball.
  2. Remove from heat; let cool slightly. Add eggs one at a time, mixing well after each addition until smooth.
  3. Drop tablespoon-sized portions on a lined baking sheet, spacing them apart. Bake for 25-30 minutes until golden brown.
  4. Meanwhile, whisk together coconut milk, sugar, cornstarch, and vanilla in another saucepan over medium heat until thickened. Allow to cool completely.
  5. Once cooled, fill the puffs with coconut cream and drizzle with caramel before serving.
