Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup canned pumpkin puree
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tsp baking powder
  • 2 tsp ground cinnamon
  • 2 large eggs
  • ⅓ cup vegetable oil

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, salt, granulated sugar, brown sugar, and cinnamon until well combined.
  3. In another bowl, mix pumpkin puree, eggs, and vegetable oil until smooth.
  4. Gently fold the wet ingredients into the dry ingredients until just combined; avoid overmixing.
