  • 2 slices sourdough or whole grain bread
  • 1 cup sharp cheddar or mozzarella cheese, shredded
  • 2 tbsp mango or spicy tomato chutney
  • 1 tbsp unsalted butter
  • Fresh basil or cilantro for garnish (optional)

Instructions

  1. Preheat a skillet over medium heat.
  2. Spread butter generously on one side of each slice of bread.
  3. Place one slice, butter-side down, in the skillet and layer with cheese.
  4. Add chutney on top of the cheese.
  5. Cover with the second slice of bread, butter-side up, and grill until golden brown (about 3-4 minutes).
  6. Carefully flip the sandwich and grill until both sides are toasted and the cheese is melted.
  7. Slice diagonally and serve hot.
