Ingredients
- 2 lb beef tenderloin
- 2 cups fresh spinach
- 1 cup cremini mushrooms, chopped
- 4 cloves garlic, minced
- 1 cup plain breadcrumbs
- 1/2 cup grated Parmesan cheese
- 3 tbsp extra virgin olive oil
- 2 tsp fresh rosemary, chopped
- 2 tsp fresh thyme, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Heat 1 tbsp olive oil in a skillet over medium heat. Sauté garlic and mushrooms until softened, about 5 minutes.
- Add spinach and herbs; cook until spinach wilts. Remove from heat and mix in breadcrumbs and Parmesan cheese.
- Cut a pocket into the beef tenderloin; season with salt and pepper. Stuff the pocket with the filling mixture.
- In an oven-safe skillet, heat remaining olive oil over medium-high heat. Sear each side of the stuffed tenderloin for about 3-4 minutes until browned.
- Transfer skillet to preheated oven and roast for 25-30 minutes or until desired doneness.
