  • 8 manicotti pasta tubes
  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant. Add seasoned chicken breasts; cook until golden brown and fully cooked.
  2. Once cooled, shred the chicken and mix with ½ cup Alfredo sauce and half of the mozzarella cheese.
  3. Carefully stuff each manicotti shell with the chicken mixture using a spoon or piping bag.
  4. Spread remaining Alfredo sauce on the bottom of a greased baking dish. Place stuffed manicotti in a single layer, drizzle with extra sauce, and top with remaining mozzarella cheese.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake another 10-15 minutes until bubbly and golden.
  6. Let rest before serving; garnish with fresh parsley if desired.
