  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 corn tortillas (or flour tortillas)
  • 2 cups shredded cheddar cheese
  • 2 cups red or green enchilada sauce
  • ¼ cup fresh cilantro, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt to taste

Instructions

  1. Cook the chicken in a large skillet over medium heat for about 6-7 minutes per side until cooked through. Let rest before shredding.
  2. Shred the chicken using two forks and mix with cumin, chili powder, salt, and half of the enchilada sauce in a bowl.
  3. Preheat your oven to 375°F (190°C). Fill each tortilla with ¼ cup of the chicken mixture, roll up tightly, and place seam-side down in a baking dish.
  4. Pour the remaining enchilada sauce over the rolled tortillas and top generously with shredded cheese.
  5. Bake for 20-25 minutes or until bubbly and golden brown.
