  • 2 ripe avocados
  • 6 slices cheddar or mozzarella cheese
  • 4 slices whole wheat bread
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat skillet over medium-high heat.
  2. Sear chicken for 6-7 minutes per side until golden brown and cooked through. Let it rest for a few minutes.
  3. Mash avocados in a bowl, adding salt and pepper.
  4. Layer sliced chicken on one slice of bread, followed by mashed avocado and cheese. Top with another slice of bread.
