  • 9 lasagna noodles
  • 2 cups cooked shredded chicken breast
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 2 cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Boil lasagna noodles until al dente according to package instructions.
  2. In a bowl, mix shredded chicken, ricotta cheese, chopped spinach, Italian seasoning, salt, and pepper until well combined.
  3. Spread half of the Alfredo sauce on the bottom of a baking dish.
  4. Lay out each noodle flat and spoon the chicken filling onto one end; roll tightly.
  5. Place the rolls seam-side down in the baking dish over the sauce. Pour remaining Alfredo sauce on top.
  6. Sprinkle mozzarella and Parmesan cheese over the rolls. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes until bubbly.
