  • 4 medium zucchini (sliced into ½-inch rounds)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic (minced)
  • ¼ cup fresh basil (chopped)
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté zucchini slices until tender and slightly golden, about 5 minutes.
  3. In a mixing bowl, combine ricotta, mozzarella, Parmesan, eggs, minced garlic, chopped basil, salt, and pepper. Mix until smooth.
  4. In a baking dish, layer half of the sautéed zucchini followed by half of the cheese mixture. Repeat layers.
  5. Bake for 30-35 minutes until golden brown and bubbly. Let cool for 5 minutes before slicing.
