  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash russet potatoes and poke holes with a fork.
  3. Bake potatoes directly on the oven rack for 45-60 minutes until tender.
  4. In a skillet, heat olive oil over medium heat, add ground meat and taco seasoning; cook until browned (7-10 minutes).
  5. Slice open each potato lengthwise, scoop out some flesh and fill with the meat mixture.
  6. Top with shredded cheese and return to the oven for another 10-15 minutes until melted.
