- 1 lb sirloin or ribeye steak, diced
- 2 cups Yukon Gold or russet potatoes, thinly sliced
- 2 cups shredded sharp and mild cheddar cheese (divided)
- 1 medium sweet onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup whole milk
- 2 tbsp unsalted butter (plus additional for sautéing)
- Salt and pepper to taste
- 1 tsp smoked paprika
- 1 tsp dried thyme
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet over medium heat, melt butter and sauté onions until translucent (about 5 minutes). Add garlic and sauté for an additional minute.
- In a bowl, toss sliced potatoes with salt, pepper, paprika, and half of the cheddar cheese.
- Layer half of the seasoned potatoes in a large baking dish. Add half of the sautéed onions and garlic followed by diced steak. Repeat with remaining ingredients.
- In a saucepan over low heat, whisk together milk and remaining butter until melted; pour over layered ingredients.
- Top with remaining cheddar cheese, cover with foil, and bake for 45 minutes. Remove foil for the last 10 minutes of baking.
