  • 1 cup granulated sugar
  • 1 ½ cups shredded carrots (about 3 medium carrots)
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ½ cup chopped walnuts or pecans (optional)
  • Cream cheese frosting for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. Pour in the vegetable oil and beat in eggs one at a time until well combined. Gently fold in the shredded carrots.
  4. If using, fold in the chopped nuts carefully.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool before frosting if desired.
