- 8 oz penne or rotini pasta
- 8 oz cream cheese
- 2 tbsp Cajun seasoning
- 3 cloves garlic, minced
- 1 cup bell peppers, diced (mix of colors)
- 1 medium onion, diced
- 1 cup low-sodium chicken broth
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Chop chicken into bite-sized pieces and dice bell peppers and onion.
- Cook pasta in boiling salted water until al dente; drain and set aside.
- In a skillet over medium heat, sauté onions in olive oil until translucent; add garlic and cook until fragrant.

- In a large bowl, mix cooked pasta, chicken mixture, cream cheese, bell peppers, and chicken broth until well combined.
