  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz penne or rotini pasta
  • 8 oz cream cheese
  • 2 tbsp Cajun seasoning
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (mix of colors)
  • 1 medium onion, diced
  • 1 cup low-sodium chicken broth
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Chop chicken into bite-sized pieces and dice bell peppers and onion.
  3. Cook pasta in boiling salted water until al dente; drain and set aside.
  4. In a skillet over medium heat, sauté onions in olive oil until translucent; add garlic and cook until fragrant.
  5. Add chicken and Cajun seasoning to the skillet; cook until browned on all sides.
  6. In a large bowl, mix cooked pasta, chicken mixture, cream cheese, bell peppers, and chicken broth until well combined.
  7. Transfer to a greased baking dish; top with shredded mozzarella and cheddar cheeses.
  8. Bake uncovered for 25–30 minutes or until bubbly and golden brown.
  9. Let cool slightly before serving.
