  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers, diced (mix of red and green)
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black or kidney beans, rinsed
  • ½ cup buffalo sauce (adjust to taste)
  • 2 cups low-sodium chicken broth
  • 1 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté onion and bell peppers until softened.
  2. Add minced garlic; cook until fragrant.
  3. Stir in diced chicken breasts; brown on all sides.
  4. Add fire-roasted tomatoes and rinsed beans; mix well.
  5. Pour in chicken broth; stir in cumin and chili powder.
