- 1 tbsp tomato paste
- 1 tsp brown sugar
- 5 pimento/allspice berries
- 2 cups water

Instructions
- Wash and pat dry the chicken pieces. Season generously with salt, pepper, garlic, thyme, and soy sauce. Marinate for at least 30 minutes.
- Heat oil in a skillet over medium-high heat. Sear chicken skin-side down until golden brown (5-7 minutes per side). Remove from skillet.
- Add onions and bell peppers to the skillet; sauté until onions are translucent (about 3-4 minutes).
- Stir in tomato paste, soy sauce, brown sugar, pimento berries, and water. Add back the chicken.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 30-35 minutes or until chicken is tender.
