  • 2 lbs bone-in chicken pieces (thighs and drumsticks)
  • 4 cloves fresh garlic, minced
  • 1 large onion, thinly sliced
  • 1 cup bell peppers, sliced (mix of colors)
  • 2 tsp fresh thyme leaves
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp tomato paste
  • 1 tsp brown sugar
  • 5 pimento/allspice berries
  • 2 cups water
  • Salt and pepper to taste

Instructions

  1. Wash and pat dry the chicken pieces. Season generously with salt, pepper, garlic, thyme, and soy sauce. Marinate for at least 30 minutes.
  2. Heat oil in a skillet over medium-high heat. Sear chicken skin-side down until golden brown (5-7 minutes per side). Remove from skillet.
  3. Add onions and bell peppers to the skillet; sauté until onions are translucent (about 3-4 minutes).
  4. Stir in tomato paste, soy sauce, brown sugar, pimento berries, and water. Add back the chicken.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 30-35 minutes or until chicken is tender.
