- 3 lbs bone-in chuck roast
- 4 dried guajillo chiles
- 1 large onion, chopped
- 4 garlic cloves, crushed
- 1 cinnamon stick
- Juice of 2 fresh limes
- 12 corn tortillas
- Chopped cilantro and onions for garnish
Instructions
- Prepare the chiles: Remove stems and seeds from guajillo chiles. Toast briefly in a dry skillet until fragrant, then soak in hot water.
- Sear the meat: Heat oil in a large pot over medium-high heat. Season chuck roast with salt and pepper; sear until browned on all sides.
- Create the marinade: Blend soaked chiles, onion chunks, garlic, cinnamon stick, and some cooking broth until smooth.
- Cook together: Pour marinade over seared meat, add enough broth to submerge, and simmer on low heat for about 3 hours until tender.
- Shred meat & prepare consomme: Remove meat from pot and shred. Strain cooking liquid for consomme.
- Assemble tacos: Warm tortillas, fill with shredded meat, and serve with warm consomme for dipping. Garnish with lime juice, cilantro, and onions.
