- 1 cup BBQ sauce
- 2 cups shredded cheese (cheddar and Monterey Jack mix)
- 4 flour tortillas
- 2 tsp olive oil
- 2 green onions, chopped
- Sour cream (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until internal temperature reaches 165°F (75°C).
- Shred cooked chicken in the skillet using two forks and mix with BBQ sauce until well coated.
- On one half of a tortilla, layer shredded cheese and spoon BBQ chicken mixture on top. Sprinkle more cheese and fold the tortilla.
- In the same skillet, add more olive oil if necessary, then place the folded quesadilla inside. Cook for about 3-4 minutes per side until golden brown.
- Cut into wedges and serve hot, garnished with chopped green onions and sour cream if desired.
