- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup Baileys Irish Cream
- ¾ cup granulated sugar
- 1 cup heavy whipping cream
- 1 tsp vanilla extract
- Cocoa powder (optional for dusting)
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
- Bake for 8-10 minutes until lightly golden. Let cool completely.
- In a bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix well for 2-3 minutes.
- Add Baileys and vanilla extract; blend until smooth.
- Whip heavy cream to soft peaks and gently fold into the Baileys mixture.
- Pour filling over cooled crust and spread evenly. Refrigerate for at least 4 hours or preferably overnight.
- Serve chilled, optionally dusted with cocoa powder.
