  • 4 boneless, skinless chicken breasts (about 1 pound)
  • 1 ripe mango, diced
  • 3 cloves garlic, minced
  • 1 thumb-sized piece of fresh ginger, grated
  • 1/3 cup low-sodium soy sauce
  • 2 tbsp pure honey
  • Juice of 1 lime
  • 2 tbsp vegetable oil

Instructions

  1. Rinse chicken under cold water, pat dry, and cut into bite-sized pieces.
  2. Marinate chicken in soy sauce, honey, lime juice, garlic, and ginger for at least 30 minutes.
  3. Heat oil in a skillet over medium-high heat. Add marinated chicken in a single layer; cook until golden brown (about 5 minutes). Flip and cook until nearly done.
  4. Stir in diced mango and remaining marinade; simmer for about 3 minutes until the sauce thickens.
  5. Serve hot over rice or noodles, garnished with sesame seeds if desired.
