Description

A comforting classic that combines tender beef and fresh vegetables in a rich broth, perfect for cozy evenings with friends and family.


Ingredients

  • Beef Chuck Roast
  • Carrots
  • Yukon Gold Potatoes
  • Onions
  • Beef Broth
  • Fresh Thyme
  • Bay Leaves
  • Salt and Pepper

Instructions

  1. Chop the beef into bite-sized cubes, dice onions, slice carrots, and peel potatoes.
  2. Heat a large pot over medium-high heat. Add oil and sear the beef until browned on all sides (about 4-5 minutes).
  3. Add onions and carrots; sauté for 3-4 minutes until softened.
  4. Pour in enough beef broth to cover ingredients, add bay leaves and thyme, then bring to a boil.
  5. Reduce heat to low, stir in potato chunks, and simmer for 1.5 hours or until meat is tender.
  6. Taste and adjust seasoning before serving hot with crusty bread.
