Instructions
- Chop the beef into bite-sized cubes, dice onions, slice carrots, and peel potatoes.
- Heat a large pot over medium-high heat. Add oil and sear the beef until browned on all sides (about 4-5 minutes).
- Add onions and carrots; sauté for 3-4 minutes until softened.
- Pour in enough beef broth to cover ingredients, add bay leaves and thyme, then bring to a boil.
- Reduce heat to low, stir in potato chunks, and simmer for 1.5 hours or until meat is tender.
- Taste and adjust seasoning before serving hot with crusty bread.
