Ingredients

  • 1 cup Guinness Stout
  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup unsalted butter
  • Cream cheese and powdered sugar for frosting

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round baking pans.
  2. In a bowl, whisk melted butter and Guinness until combined. Add sour cream and eggs; mix until smooth.
  3. In another bowl, sift together flour, cocoa powder, sugar, baking soda, and salt. Whisk to combine.
  4. Gradually add the dry mixture to the wet ingredients using a spatula until just combined.
  5. Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. For frosting, beat softened cream cheese and butter; gradually add powdered sugar until smooth.
  7. Once cakes are cool, frost one layer generously before placing the second layer on top and frosting the sides.
