  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter (cold, cubed)
  • 2 large eggs
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • Zest of 1 lemon
  • 1/2 teaspoon baking powder
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking pan or line it with parchment paper.
  2. In a bowl, mix flour and sugar; cut in cold butter until crumbly. Press into the bottom of the prepared pan. Bake for 15 minutes until lightly golden.
  3. In another bowl, whisk together eggs, lemon juice, zest, remaining sugar, baking powder, and raspberries until well combined.
  4. Pour the filling over the warm crust and spread gently. Bake for an additional 25-30 minutes or until set.
  5. Allow the bars to cool completely before slicing into squares.
