Ingredients

  • 1 lb sirloin or ribeye steak, cut into bite-sized pieces
  • 4 cloves fresh garlic, minced

  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil salted water in a large pot and cook pasta according to package instructions until al dente. Drain, reserving some pasta water.
  2. Sear the Steak: Heat olive oil in a large skillet over medium-high heat. Add seasoned steak pieces and sear until browned on both sides (about 3-4 minutes per side).
  3. Add Garlic: Reduce heat to medium-low; add minced garlic and sauté until fragrant (about 30 seconds).
  4. Create the Sauce: Stir in heavy cream, simmer gently while adding grated Parmesan cheese gradually until melted and smooth.
  5. Toss It All Together: Return cooked pasta to the skillet; toss with sauce and steak, adding reserved pasta water as needed for desired creaminess.
  6. Serve: Garnish with additional Parmesan or fresh herbs if desired, and serve hot.
