  • 1 cup cauliflower florets (steamed until tender)
  • 1 cup low-fat cheddar cheese (shredded)
  • ½ cup plain Greek yogurt

  • 1 tsp mustard powder
  • 1 cup low-sodium vegetable broth
  • 1 cup spinach or broccoli (chopped, optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and set aside.
  2. Steam the cauliflower florets until fork-tender, about 10 minutes.
