  • 1/2 tsp baking soda

  • 1/2 cup unsalted butter (softened)
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar (packed)
  • 1 tsp vanilla extract
  • 1 large egg
  • 1 cup chocolate chips
  • 1 pint of your favorite ice cream

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, granulated sugar, brown sugar, and vanilla until fluffy.
  3. Add the egg and mix well until fully incorporated.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually combine with wet ingredients until just mixed.
  5. Gently fold in chocolate chips and drop spoonfuls onto the prepared baking sheet.
  6. Bake for about 10 minutes until golden around the edges but soft in the center. Cool completely on wire racks.
  7. Once cooled, scoop ice cream onto half of the cookies and top with another cookie to form a sandwich.
  8. For added fun, roll edges in sprinkles or mini chocolate chips before freezing for one hour.
