- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1 tsp pure vanilla extract
- 3 large eggs
- ½ cup heavy cream
- 2 tbsp granulated sugar (for topping)
Instructions
- Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until mixed. Press into the bottom of a lined baking pan.
- Bake the crust for 10 minutes until golden. Let it cool.
- In a large bowl, beat cream cheese until smooth. Gradually add granulated and brown sugars; mix until fluffy.
- Add eggs one at a time, followed by heavy cream and vanilla; mix until just combined.
- Pour filling over the cooled crust and bake for 30-35 minutes until set around the edges but slightly wobbly in the center.
- Cool at room temperature before refrigerating for at least four hours or overnight.
- Before serving, sprinkle granulated sugar on top and caramelize using a kitchen torch or broiler until golden brown.
