Description

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp pure vanilla extract
  • 3 large eggs
  • ½ cup heavy cream
  • 2 tbsp granulated sugar (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter until mixed. Press into the bottom of a lined baking pan.
  2. Bake the crust for 10 minutes until golden. Let it cool.
  3. In a large bowl, beat cream cheese until smooth. Gradually add granulated and brown sugars; mix until fluffy.
  4. Add eggs one at a time, followed by heavy cream and vanilla; mix until just combined.
  5. Pour filling over the cooled crust and bake for 30-35 minutes until set around the edges but slightly wobbly in the center.
  6. Cool at room temperature before refrigerating for at least four hours or overnight.
  7. Before serving, sprinkle granulated sugar on top and caramelize using a kitchen torch or broiler until golden brown.
