- 3 cloves fresh garlic, minced
- 1 medium yellow onion, diced
- 1 cup fresh basil leaves, torn
- 8 oz burrata cheese
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté chopped onions until translucent, about 3-5 minutes. Add minced garlic and cook until fragrant.
- Stir in canned tomatoes (with juice), breaking them up gently with a spoon. Simmer for 10 minutes until the sauce thickens.
- Stir in torn basil just before removing from heat.
- In a separate pot, boil salted water. Cook gnocchi according to package instructions until they float (about 2-3 minutes). Drain and add to the skillet with the sauce.
- Gently mix until gnocchi is well coated. Top with burrata cheese and allow it to warm through before serving.
