  • 1 lb large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet over medium heat, heat olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Add the shrimp, seasoning with salt and pepper. Cook until pink (approximately 3 minutes).
  4. Stir in the asparagus and cook until tender-crisp (about 4 minutes).
  5. Slowly pour in the heavy cream while stirring. Allow it to simmer for about 5 minutes until slightly thickened.
  6. Mix in Parmesan cheese until melted, then add lemon juice for brightness.
  7. Serve immediately with additional Parmesan on top.
