  • 1 ½ cups crushed graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup heavy cream
  • 2 tsp pure vanilla extract
  • 1 cup crushed unsalted pistachios
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter until combined. Press into the bottom of a springform pan.
  2. In a bowl, blend cream cheese and sugar until smooth. Add heavy cream and vanilla; mix until fluffy.
  3. Fold in crushed pistachios and lemon juice.
  4. Pour filling over the crust and bake for 45-50 minutes until set but slightly jiggly in the center.
  5. Cool at room temperature before refrigerating for at least 4 hours or overnight.
  6. Garnish with extra pistachios before serving.
