Ingredients

  • 2 lbs beef chuck roast, cubed
  • 1 medium onion, chopped
  • 4 garlic cloves, crushed
  • 2 bell peppers (red and green), chopped
  • 1 can (14.5 oz) diced tomatoes with juices
  • 2 cups beef broth
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Optional: Serve over 3 cups cooked pasta or rice

Instructions

  1. Prepare all ingredients before starting.
  2. Set the Instant Pot to sauté mode; heat oil and sauté onion and garlic until translucent.
  3. Add cubed beef, browning on all sides to enhance flavor.
  4. Stir in bell peppers, paprika, oregano, salt, and pepper until well mixed.
  5. Pour in diced tomatoes and beef broth; scrape up any browned bits from the pot.
  6. Seal lid; cook on high pressure for 30 minutes.
  7. Once done, carefully release pressure, stir well, and serve over pasta or rice.
