Ingredients

  • 2 fresh salmon fillets (about 6 oz each)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 ripe avocado, diced
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Pat salmon dry and marinate in a mixture of olive oil, lime juice, cilantro, salt, and pepper for 15-20 minutes.
  3. Grill salmon skin-side down for 5-6 minutes per side or until it flakes easily.
  4. While salmon grills, chop cherry tomatoes, red onion, and avocado; combine in a large bowl with remaining cilantro.
  5. Whisk together the leftover marinade (cooked) or additional lime juice and olive oil for dressing.
  6. Once the salmon is ready and slightly cooled, flake over the salad and toss gently.
