  • 1/4 cup pine nuts, toasted
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by finely chopping parsley and mincing garlic.
  2. In a bowl, mix ground chicken, parsley, garlic, lemon zest, salt, and pepper until just combined. Avoid overmixing to keep meatballs tender.
  3. Form the mixture into 1-inch meatballs and place on a parchment-lined baking sheet.

  5. Cook orzo in salted boiling water according to package instructions until al dente. Drain and reserve some pasta water.
  6. In the skillet with meatballs, add cooked orzo and pine nuts; toss gently to combine while adding reserved pasta water if needed.
