- ½ red onion, chopped
- 1 cup corn (canned or fresh)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, diced
- ½ cup fresh cilantro, chopped
- ½ cup sour cream or Greek yogurt
- 2 tbsp chipotle sauce
Instructions
- Marinate the chicken by mixing olive oil, lime juice, cumin, paprika, salt, and pepper in a bowl. Let it sit for at least 30 minutes.
- Grill or sauté the marinated chicken over medium-high heat for about 6-8 minutes on each side until golden brown and cooked through. Allow resting for five minutes before slicing into bite-sized pieces.
- Chop the bell peppers, onion, corn (if using fresh), black beans, cherry tomatoes, and avocado into small pieces.
- In a separate bowl or jar, whisk together sour cream or Greek yogurt with chipotle sauce until smooth.
- In a large mixing bowl, combine sliced chicken with all veggies and cilantro. Drizzle with dressing and toss gently until evenly coated.
