Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups long-grain rice
  • 1 cup fresh cilantro leaves
  • 1/4 cup freshly squeezed lime juice
  • 4 garlic cloves, minced
  • 12 green chili peppers (to taste)
  • 2 tbsp olive oil
  • 1/2 cup sour cream
  • Salt and pepper (to taste)
  • 2 cups low-sodium chicken broth

Instructions

  1. 1. Marinate the chicken: Mix olive oil, lime juice, minced garlic, salt, and pepper in a bowl. Add chicken breasts and let them marinate for at least 30 minutes.

  5. 5. Serve: Plate cooked chicken over rice and drizzle generously with the green sauce.
