- Juice of 1 lime
- 1 avocado, sliced
- ¼ cup fresh cilantro, chopped
- ½ cup sour cream
Instructions
- Marinate chicken in olive oil and taco seasoning.
- Sear chicken in a skillet over medium-high heat for about 6 minutes per side until cooked through (165°F).
- Remove chicken; sauté bell pepper and onion in the same skillet for five minutes.
- Add black beans and corn; heat through for two minutes.
