  • 32 oz frozen tater tots
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, diced
  • 1 cup bell peppers, diced (any color)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • 1 tsp garlic powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat. Sauté the diced onion and bell peppers until soft.
  3. Add the ground beef to the skillet and cook until browned. Stir in cumin, chili powder, and garlic powder.
  4. Mix in the rinsed black beans and let it simmer for about 3-4 minutes.
  5. In a greased baking dish, layer half of the tater tots, followed by half of the beef mixture and half of the cheese. Repeat layers.
  6. Bake for 25-30 minutes or until golden brown and bubbly. Allow to cool slightly before serving.
