Description

  • 4 medium yellow squash, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1 cup sour cream (or Greek yogurt)
  • 1 cup plain breadcrumbs (or panko)
  • 4 tbsp butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt 1 tablespoon of butter. Sauté the chopped onion and minced garlic until translucent.
  3. In a large bowl, combine the sautéed mixture with sliced squash, eggs, and sour cream. Mix well.
  4. Grease a casserole dish and pour in the squash mixture evenly.
  5. In a separate bowl, mix breadcrumbs with melted butter until coated. Sprinkle over the casserole.
  6. Bake for 30-35 minutes or until the top is golden brown.
