  • 1 cup bell peppers (diced)
  • 2 cups fresh spinach (roughly chopped)

  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven broiler.
  2. In a non-stick skillet over medium heat, warm the olive oil.
  3. Sauté the onions until translucent, then add bell peppers and garlic; cook for about 3 minutes.
  4. Pour in the egg whites and season with salt and pepper; let them set without stirring for about 5 minutes.
  5. Gently lift the edges to allow uncooked egg whites to flow underneath.
  6. When the top is slightly runny, add spinach on top and place under the broiler for about 2 minutes until set and lightly browned.
  7. Let cool slightly before slicing into wedges.
