  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 4 large flour tortillas
  • 1/2 cup grated Parmesan cheese
  • 1 tsp freshly cracked black pepper
  • Juice of 1 lemon

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken breasts with salt and pepper and grill for 6-7 minutes per side until cooked through (juices run clear). Let rest before slicing.
  2. While chicken cooks, chop romaine lettuce and grate Parmesan cheese.
  3. In a bowl, mix Caesar dressing with lemon juice for added zing.
  4. Lay out tortillas and layer chopped lettuce, sliced chicken, grated Parmesan, and drizzle with dressing.
  5. Fold in the sides of each tortilla and roll tightly from the bottom up to secure filling.
