- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cups romaine lettuce, chopped
- 1/2 cup Caesar dressing
- 4 large flour tortillas
- 1/2 cup grated Parmesan cheese
- 1 tsp freshly cracked black pepper
- Juice of 1 lemon
Instructions
- Preheat grill or skillet over medium-high heat. Season chicken breasts with salt and pepper and grill for 6-7 minutes per side until cooked through (juices run clear). Let rest before slicing.
- While chicken cooks, chop romaine lettuce and grate Parmesan cheese.
- In a bowl, mix Caesar dressing with lemon juice for added zing.
- Lay out tortillas and layer chopped lettuce, sliced chicken, grated Parmesan, and drizzle with dressing.
