Ingredients

Scale
  • 1 lb lean ground beef
  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1 cup Italian breadcrumbs
  • 1 large egg
  • 1/2 cup grated Parmesan cheese
  • 4 oz fresh mozzarella cheese, cut into small cubes

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, spinach, garlic, breadcrumbs, egg, and Parmesan cheese. Mix until well blended.
  3. Take about two tablespoons of the mixture and flatten it in your palm. Place a cube of mozzarella in the center and enclose it with the meat mixture to form a ball.
  4. Arrange the meatballs on the prepared baking sheet and bake for 20-25 minutes until golden brown and cooked through.
  5. Allow to cool slightly before serving with marinara sauce or over pasta.
