Ingredients

Scale
  • 1 baguette or sourdough loaf (12 oz)
  • 1 cup mixed olives (green and black), pitted
  • 2 tbsp capers
  • 2 garlic cloves, minced
  • 4 oz goat cheese, softened
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon

Instructions

  1. Prepare the tapenade by combining olives, capers, garlic, lemon juice, and olive oil in a food processor. Pulse until finely chopped but still slightly chunky.
  2. Taste the tapenade and adjust seasoning if needed.
  3. Slice the baguette into thick pieces and spread goat cheese on one side of each slice.
  4. Spoon tapenade generously over half of the goat cheese-covered slices.
  5. Top with remaining slices, goat cheese side down. Press gently to adhere.
  6. For warm sandwiches, toast in a skillet over medium heat for 3-4 minutes per side until golden brown.
