Ingredients

  • 1 cup quinoa
  • 1 cup canned chickpeas, drained and rinsed
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 3 tbsp tahini
  • ½ cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, reduce heat to low, cover, and cook for 15 minutes until fluffy.
  2. Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, salt, and pepper. Roast for about 20 minutes until crispy.
  3. Dice cucumber and halve cherry tomatoes.
  4. For the dressing, whisk together tahini, Greek yogurt, lemon juice, olive oil, and salt until smooth. Add water if needed for consistency.
  5. To assemble, layer quinoa at the base of a bowl, top with roasted chickpeas, veggies, and drizzle dressing over everything.
