Ingredients
- 1 cup quinoa
- 1 cup canned chickpeas, drained and rinsed
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 3 tbsp tahini
- ½ cup Greek yogurt
- 2 tbsp lemon juice
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, reduce heat to low, cover, and cook for 15 minutes until fluffy.
- Preheat oven to 400°F (200°C). Toss chickpeas with olive oil, salt, and pepper. Roast for about 20 minutes until crispy.
- Dice cucumber and halve cherry tomatoes.
- For the dressing, whisk together tahini, Greek yogurt, lemon juice, olive oil, and salt until smooth. Add water if needed for consistency.
- To assemble, layer quinoa at the base of a bowl, top with roasted chickpeas, veggies, and drizzle dressing over everything.
