- 8 corn tortillas
- 1 can (15 oz) black beans, rinsed
- 2 cups salsa
- 2 cups shredded sharp cheddar cheese

- 2 tsp chili powder
- Cooking spray or olive oil for greasing
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, sauté diced onion and bell pepper until softened. Add ground beef; cook until browned and drain excess fat.
- Stir in black beans, salsa, cumin, and chili powder. Simmer for about 5 minutes.
- Layer tortillas at the bottom of the dish, followed by half the meat mixture and half the cheese. Repeat the layers with remaining ingredients.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes until cheese is bubbly and golden.
