  • 1 lb lean ground beef
  • 8 corn tortillas
  • 1 can (15 oz) black beans, rinsed
  • 2 cups salsa
  • 2 cups shredded sharp cheddar cheese
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 tsp cumin
  • 2 tsp chili powder
  • Cooking spray or olive oil for greasing

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, sauté diced onion and bell pepper until softened. Add ground beef; cook until browned and drain excess fat.
  3. Stir in black beans, salsa, cumin, and chili powder. Simmer for about 5 minutes.
  4. Layer tortillas at the bottom of the dish, followed by half the meat mixture and half the cheese. Repeat the layers with remaining ingredients.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake an additional 15-20 minutes until cheese is bubbly and golden.
  6. Let rest for 10 minutes before serving.
