Ingredients

  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water, bring to a boil.
  2. Once boiling, reduce heat to low, cover, and simmer for about 15 minutes until fluffy. Let it sit off heat for 5 minutes.
  3. While quinoa cooks, chop cherry tomatoes and cucumber; slice red onion.
  4. In a small bowl, whisk together olive oil and lemon juice; season with salt and pepper.
  5. In a large bowl, mix cooked quinoa with vegetables, feta cheese, and parsley. Drizzle with dressing.
  6. Serve in individual bowls or plates; garnish with extra parsley or lemon wedges if desired.
