Description

  • 8 oz Sirloin or Ribeye steak
  • 4 cups mixed greens (arugula, spinach, kale)
  • 1 cup butternut squash (cubed)
  • 1 cup cherry tomatoes (halved)
  • 1/2 medium red onion (thinly sliced)
  • 1/2 cup feta cheese (crumbled)
  • 3 tbsp balsamic vinaigrette

Instructions

  1. Season steak with salt and pepper; let sit at room temperature for 15 minutes. Preheat grill to medium-high and grill steak for about 5 minutes per side until desired doneness. Let rest for 5 minutes before slicing.
  2. Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
  3. In a large bowl, combine mixed greens, red onion, and cherry tomatoes. Add roasted squash and feta cheese; drizzle with balsamic vinaigrette and toss gently.
  4. Arrange sliced steak on top of the salad and serve immediately.
