- 3 tbsp balsamic vinaigrette
Instructions
- Season steak with salt and pepper; let sit at room temperature for 15 minutes. Preheat grill to medium-high and grill steak for about 5 minutes per side until desired doneness. Let rest for 5 minutes before slicing.
- Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until tender.
- In a large bowl, combine mixed greens, red onion, and cherry tomatoes. Add roasted squash and feta cheese; drizzle with balsamic vinaigrette and toss gently.
- Arrange sliced steak on top of the salad and serve immediately.
