  • 2 cups fresh broccoli florets
  • 1 cup long-grain jasmine rice
  • 2 cups low-sodium chicken broth
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 2 cloves fresh garlic, minced
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients. Chop broccoli into bite-sized pieces and rinse rice until the water runs clear.
  2. In a large skillet over medium heat, add olive oil. Season chicken breasts with salt and pepper, then cook for about 5 minutes on each side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, add broccoli and a splash of chicken broth. Cover and steam for about 5 minutes until tender-crisp.
  4. Meanwhile, cook rice by combining it with 2 cups of chicken broth in a saucepan over high heat; bring to a boil. Reduce heat to low, cover tightly, and simmer for about 15 minutes.
  5. Return the cooked chicken to the skillet with broccoli, adding soy sauce and honey; mix until well combined.
  6. Serve generous portions of rice topped with the chicken-broccoli mixture.
