Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 bunch fresh asparagus
  • 4 garlic cloves, minced
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Black pepper to taste
  • 1 teaspoon dried thyme
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray. Season the chicken with salt and pepper.
  2. In a bowl, mix together the soy sauce, garlic, lemon juice, thyme, and red pepper flakes (if using). Pour half of this mixture over the seasoned chicken in the baking dish.
  3. Trim the tough ends off the asparagus and arrange them around the chicken; drizzle with the remaining marinade.
  4. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C). Let rest for five minutes before slicing and serve hot.
