- 4 boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 1 cup panko bread crumbs
- 1/4 cup fresh basil leaves, finely chopped
- 1/2 cup full-fat mayonnaise
- 2 tbsp freshly squeezed lemon juice
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat chicken breasts dry with paper towels.
- In a bowl, mix together Parmesan cheese, panko bread crumbs, garlic powder, paprika, salt, and pepper.
- Dredge each chicken breast in the breadcrumb mixture until fully coated.
- Place coated chicken on the baking sheet and bake for 25-30 minutes until golden brown and cooked through.
- While baking, whisk together mayonnaise, basil leaves, lemon juice, garlic powder, salt, and pepper in a bowl to make the aioli.
