  • 4 boneless, skinless chicken breasts
  • 1 cup freshly grated Parmesan cheese
  • 1 cup panko bread crumbs
  • 1/4 cup fresh basil leaves, finely chopped
  • 1/2 cup full-fat mayonnaise
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat chicken breasts dry with paper towels.
  3. In a bowl, mix together Parmesan cheese, panko bread crumbs, garlic powder, paprika, salt, and pepper.
  4. Dredge each chicken breast in the breadcrumb mixture until fully coated.
  5. Place coated chicken on the baking sheet and bake for 25-30 minutes until golden brown and cooked through.
  6. While baking, whisk together mayonnaise, basil leaves, lemon juice, garlic powder, salt, and pepper in a bowl to make the aioli.
  7. Once chicken is done, serve hot with basil aioli on the side.
