  • 4 medium starchy potatoes (Russet or Yukon Gold)
  • 1 sweet onion, finely chopped
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. Peel and rinse the potatoes to remove excess starch.
  2. Grate the potatoes finely using a box grater or food processor. Squeeze out as much moisture as possible using a clean kitchen towel.
  3. In a mixing bowl, combine grated potatoes with chopped onion, beaten eggs, flour, salt, and pepper until well blended.
  4. Heat 1/4 inch of vegetable oil in a skillet over medium heat until hot.
  5. Scoop about 1/4 cup of the potato mixture into the skillet and flatten it gently with a spatula.
  6. Fry each pancake for about 3-4 minutes on each side until golden brown and crispy.
