  • 1 pound Italian sausage (sweet or spicy)
  • 3 bell peppers (mixed colors)
  • 1 medium yellow onion
  • 4 cloves garlic
  • 1 cup heavy cream
  • 2 pounds Yukon Gold potatoes
  • Butter, salt, and pepper for mashed potatoes

Instructions

  1. Prepare the mashed potatoes by peeling and cubing the Yukon Gold potatoes. Boil in salted water until fork-tender.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions and bell peppers until soft.
  3. Slice the Italian sausage into rounds and add to the skillet, browning on all sides.
  4. Incorporate minced garlic into the skillet when the sausage is nearly cooked through.
  5. Pour in heavy cream and Italian seasoning; simmer for about five minutes until slightly thickened.
  6. Drain the potatoes, return them to pot, and mash with butter, salt, and pepper until smooth.
  7. Serve the sausage and peppers mixture over mashed potatoes.
